Middle Eastern Syle Chicken with Green Goddess Giant Cous Cous Salad

Day off today, so a little more time to prepare dinner, as well as catch up with the household basics, washing, cleaning blah, blah, blah..


I fancy Middle Eastern flavours, so will use Sumac, Pomegranate Molasses, chilli flakes, Garlic granules and Olive Oil.


Take some Chicken Thighs, I am using Aldi skin on, bone in ones.


Into a large freezer bag add a large glug of olive oil, same quantity of Pomegranate Molasses and a teaspoon each of Sumac and Garlic granules with as many chilli flakes as you like – mix together


add the chicken. Smooch it all together and leave for several hours or overnight to marinate.

Hubby has bought a new toy BBQ, so he will cook the chicken on it. That’s why I have used the skin on, bone in chicken, so it has crispy skin and the bone keeps the Chicken moist.


To go with this, I have cooked some Giant Cous Cous for 10-15 minutes


stir through some olive oil, leave to cool.

IMG_3873Hubby has been busy in the garden – he grows it – I cook it 🤗 This year, to name a few, we have Stawberries, Potatoes, Aubergine, cauliflower, tomatoes (lots), chilli’s, courgettes, fennel, Rocket, umpteen herbs including Basil, coriander, thyme, oregano and lots of mint.



Using up some salad Veg, celery, cucumber etc


Then add the juice of a lemon


a chopped bunch of mint (I am using from the garden),


a chopped bunch of coriander,


a sliced bunch of spring onions, season with a little salt and pepper and mix it all through.




Top with Pomegranate seeds, for that sweet/sour contrast and a little sumac and pistachio Dukha and serve.


Really tasty, and if you take out the time for the chicken to marinate, it’s easy to make 🤗
