BBQ Chicken Tikka Kebabs with New potatoes and salad

We are trying to fit a BBQ in between the showers forecast πŸ€—

I received a Muscle Foods order yesterday, with some lovely plump chicken breasts.

IMG_3892I have half a jar of Tikka paste in the fridge, so I have mixed it with half a large tub of plain Greek Yoghurt, some lemon juice, salt and pepper and popped it into a large freezer bag.

I have used 4 of the breasts, one of which I will leave whole for youngest’s lunch tomorrow for work (long shift) – 3 will be diced into big chunks for the Kebabs. The remaining 8 are split into batches of 2 and frozen for another day πŸ˜‡

Pop this all into the freezer bag – then into the fridge for several hours or overnight if you have time πŸ™ƒ

When ready, pop the chicken onto the skewers – a messy job, but well worth it – don’t pack them too tightly, so they cook in between.

I also topped up at Aldi with fresh salad Veg and some new potatoes (not for me – low carving to loose my jelly belly 😳)

I have chopped some bell peppers and onions for the kebabs and will add some baby tomatoes – I, well hubby, wAnts to Cooke the chicken separately from the veg, so he can get each cooked ‘to perfection’

IMG_3904I still had Β 2 Field mushrooms that need using, so, with the little bit of garlic butter I hadΒ left in the freezer.

The potatoes will be boiled and tossed in butter and Home grown mint 😍 they smell amazing… no, I must resist….

The Veg and mushrooms are cooked in the BBQ

Chicken Tikka is ready.

I am Serving on a bed of watercress for the Salad. Β I think BBQ is an equitable division of labour, I prepare, he cooks, we both tidy πŸ€—

Pud is strawberries and cream – not home grown – yet… πŸ˜‰

Hi - I'm a 49 yo Mum to 3 kids - Jordan (23), Grace (21) and Max (19). And Wife to my lovely Husband, Dave and step mum to 4 fur babies, our cats Eric, Ernie, Cilla and Bobbie. We live on the beautiful Isle of Wight, Hubby and I were born here, and just love our home. As I hurtle towards 50, my life as a full time (working) parent is coming to an end, with my eldest 2 kids living their own lives, and my youngest who started University in September. I realised that this is not a time to be sad, but a time to take time to spend time on some of the things I enjoy doing - mainly cooking, crafting and creating Pinterest boards for said thing s :) This blog is just a way for me to record the next stages of our lives - I hope you enjoy my ramblings...
