Monday – back to work 😏 My veggie drawer is looking a little sad, so our Meat Free dinner will be a Frittata – Spinach, watercress, spring onion and goats cheese 😊
Turn the grill onto high
I roughly chop the veg, ready to go, then pop a glug of Veg oil in an oven proof frying pan, over a medium heat, I have also used the remains of a jar of chargrilled peppers from the weekend.
Pop the veg into the pan,
followed by the eggs,
I am using 8 eggs for this little beauty, whisk together with a glug of cream (or milk), salt, pepper. Pour over the veg and gently stir.
As the edges of the Frittata start to pull away from the pan, add slices of goats cheese, I use the creamy ‘log’ version.
Put the pan under the grill, whilst you get the rest of your bits ready – keep an eye on it.
The menfolk are having fried new potatoes with theirs, chop your potatoes
shake them with olive oil and garlic, season well and fry over a medium heat till golden brown and cooked through.
With mine, simple griddled tomatoes With a splash of balsamic 😇
