Bacon Wrapped stuffed Chicken Breast Asparagus and Poached Egg

It’s the end of my paid working week, and I am blooming hungry – the low carb thing is going well, but I forgot to take my lunch 😳 But my jeans already feel a bit more comfortable – I never weigh, I go by what I can fit into 🤣


Tonight I am making Herbed cheese stuffed Chicken Breast wrapped in smokey bacon, Asparagus and Poached egg for me – jacket spuds and salad for the men.


I started by defrosting 3 Iceland frozen chicken breasts – they are huge 😆


I carefully make a ‘pocket’ in each one,


add a 3rd of a pack of Herbed soft cheese. (I love this Aldi cheese 😋)


Lay 3 or 4 bacon rashers out – depending on the size of your breasts (no sniggering at the back 🤣)


place the Chicken ‘pocket’ side up onto the bacon, carefully wrap each Breast


pop into a lined ovenproof tray.


These can be cooked in a hot oven (180) for approx 30 minutes, till cooked through.


I am steaming the Asparagus whilst the egg poaches, I use the Thermomix like I did Here

If you didn’t know, if you bend the Asparagus spear, it will break where the most tender part starts – don’t throw the ends, freeze and add risottos, soups etc


the jacket spuds for Hubby and youngest spend 10 minutes in the microwave before going in with the chicken, on a separate tray for 30 minutes.

IMG_3972Serve up with the Asparagus first with the Poached egg sat on top next to the delicious chicken – a proper hunger killer 😍


Youngest is working 12 hr shifts for the next 4 days, so I have made his work food too.

Breakfasts – Greek Yoghurt and a little pot of granola
Lunches – Chicken salad wraps or Ham salad rolls
Dinners – Chicken Tikka and rice or ginger chicken and vegetable Cous Cous
Loads of fruit etc too

What would he do without me 🙄
