Fakeaway Thai Green Curry – Made from scratch

As part of my low carb thing, I have been avoiding shop bought sauces etc it’s amazing how many sneaky bit they chuck in jars šŸ˜²

I am making a Thai Green Curry Paste in my Thermomix, half to use tonight and half to freeze for another day – I used to make this a lot, then got lazy and went back to jars, but Homemade tastes so much better and you can adjust to suit your own tastes. It looks like a lot of ingredients but apart from the Kaffir Lime Leaves, its all from Aldi šŸ˜‡

Into the Thermomix bowl add 2 deseeded medium green chilli’s chopped in half (add more if you like it hot) a small onion chopped into 4, 10cm peeled fresh ginger, 2 fat garlic cloves, leaves from a bunch of basil (handful), 2 lemongrass stalks, finely sliced avoiding the ‘woody’ bits, a whole bunch of fresh coriander, the grated zest and juice of a Lime, 8 kaffir Lime leaves (add more lime zest if you don’t have leaves), a good pinch of crushed black pepper, 1 teaspoon of brown sugar, 2 teaspoons of light Soy Sauce, 50g olive oil

Whizz for a minute at speed 10, scrape down the bowl and repeat.

I am making a Chicken curry tonight, and have cut 2 breasts into big chunks

I dice an onion and gently fry, adding the Chicken, then the Curry Paste.

I then add a pack of diced baby corn, sliced red pepper, a pack of sliced Mange Tout, and 2 chopped Pak Choi, stir through, tasting and adjusting seasoning to suit.

Add a tin of coconut milk – (Just bare in mind, I had the kitchen upside down this afternoon and could not find this anywhere, I ALWAYS have coconut milk in the cupboard! – because I am lazy, and did not want to get changed out of my ‘comfies’, and back into my ‘outdoor’ clothes, I spent far too long in the kitchen turfing everything out, and finally found a quarter box of coconut milk powder – so fingers crossed, and ya-boo-sucks to me for being so cock sure that I always know what I have in……)

I have packed this with Veg, so will have by itself

Hubby and Youngest will have theirs with rice and a veggie spring roll
