Braised Chicken Thighs and Lentils

Its cooler today, that’s not a moan, it’s lovely 😊

I want to cook something a bit more comforting tonight, but still trying to keep carbs down.


I have a pack of 8 Aldi Chicken Thighs which will be the main part of the meal.


I finely dice, a medium onion, a medium carrot, a stick of celery, a couple of cloves of crushed garlic and 2 finely sliced pieces of Smoked streaky bacon.


These can be lightly fried in a heavy based pan with butter and a little olive oil, adding thyme, bay leaf, salt and pepper.  Remove the veg at this stage into a separate bowl.


Take the chicken thighs, season and pop into the pan skin side down with a little more oil if needed, this is to brown the skin.


When the chicken is golden, turn skinside up and return the veg to the pan, as the veg starts to soften add a glass of dry white wine, stirring through


Then add 250ml water, a drained tin of green lentils, stir in a large tablespoon of grain mustard.



Cover and simmer till the chicken is cooked through 20-30 minutes.


I removed the thighs to a serving bowl, before adding 300ml of what should be creme fraiche, but is greek Yoghurt as that’s what I have in, stir through the sauce, season to taste.


I am simply serving this with steamed Tender stem Broccoli
