Meat Free Monday Griddled Halloumi with Warm Lentil Salad

I have the luxury of a week off work, and the storm clouds are gathering, literally- looks like the weather this week is going to be, well, yuk….. hey Ho at least I’m not at work 😊

As its Meat Free Monday I wanted to use some Halloumi that’s been waiting patiently in the fridge, and thought I would make a roasted vegetable Lentil warm salad with a lemon dressing and fried Halloumi on top πŸ˜‹ Hubby can have some of the bread I made yesterday with his.


I start by oven baking some lightly oiled tomatoes, small halved Mushrooms and some bell pepper ‘cheeks’, some chopped onions and Aubergine cook at 200 checking and stirring after 20 minutes, back in for another 20, I am looking for them to be soft with a few crispy edges to give flavour to the end dish.


I toss the oven roasted veg through Aldi’s lovely Tahini Lentil frozen mix, I adore these mixes, they make a great base for Youngest’s packed lunches when he is working 12 hour shifts and for things like this, but for a main meal they need some more veg


Stir through.


It doesn’t look too pretty at the moment, but the flavours πŸ˜‡

I make a dressing of lemon, Chilli, Pomegranate Molasses, olive oil, salt, pepper and pour it over the veg and lentil mix, and I am adding chopped coriander too. Sorry to those who don’t like it – you know who you are – feel free to change for your favourite fresh herb.


The Halloumi is cut into thick slices

IMG_4367and griddled on each side, I have added a bit of Pomegranate molasses drizzled over to ‘pep’ it up a bit. Served Β on a bed of Watercress with sliced radishes and spring onion.
