Chicken, Broccoli and Cashew Stirfry – I have been hungry all day, so dinner needs to be a good one.
It’s a healthier Low Carb version of the favourite Chicken and Broccoli
I start with th dressing. 4 tablespoons of dark Soy sauce, 3 tablespoons of peanut butter, a good squeeze of Honey, a thumb size piece of grated ginger and a tablespoon of water to loosen the mix – stir thoroughly and set aside.
I defrosted 4 chicken breast in the fridge overnight, these are cut into bite sized pieces.
chop 2 fat cloves of garlic.
Finely slice a red bell pepper and a yellow pepper, A bunch of Spring Onions. Break up a head of Broccoli into small florets and slice the stalk.
In a tablespoon of Veg oil, cook the chicken over a medium heat, add the garlic
add the onions, peppers
and the Broccoli.
Toss together and cook for a few minutes then add the cashews and the dressing
Stir through, season to taste
Serve…. Fakeaway in less time than it would take to order a takeaway 😊
